A creamy and comforting High Protein White Bean Soup that’s quick, easy, and packed with flavor!
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 2 (15-ounce) cans cannellini beans, rinsed and drained
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1 cup cooked chicken breast, diced (or plant-based chicken alternative)
- 2 tablespoons lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Pour in the vegetable broth and bring to a simmer.
- Add the rinsed and drained cannellini beans, dried thyme, dried rosemary, and red pepper flakes (if using). Stir well.
- Reduce the heat to low, cover the pot, and let the soup simmer for at least 20 minutes to allow the flavors to meld. For a creamier soup, simmer longer, up to 45 minutes.
- Use an immersion blender to partially blend the soup until it reaches your desired consistency. Alternatively, you can carefully transfer about 2 cups of the soup to a regular blender, blend until smooth, and then return it to the pot.
- Stir in the diced cooked chicken breast (or plant-based alternative) and heat through.
- Stir in the lemon juice and season with salt and black pepper to taste.
- Ladle the soup into bowls and garnish with fresh parsley before serving.
