  • 1/4 cup (60ml) milk
  • 3 ripe bananas, mashed (about 1 1/2 cups or 340g)

For the cinnamon swirl:

  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon (7g) ground cinnamon

Instructions

  1. Prepare Your Oven and Pan: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Combine Dry Ingredients: In a medium bowl, whisk together flour, baking soda, and salt.
  3. Cream Wet Ingredients: In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  4. Add Bananas and Milk: Mix in mashed bananas and milk until combined.
  5. Fold in Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Do not overmix.
  6. Prepare the Cinnamon Swirl: In a small bowl, mix 1/4 cup sugar and 1 tablespoon cinnamon for the swirl.
  7. Assemble the Loaf: Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon-sugar mixture over the batter. Add the remaining batter, then top with the rest of the cinnamon-sugar mixture. Use a knife to gently swirl the mixture through the batter.
  8. Bake to Perfection: Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
