Ingredients

  • 500g / 2 medium Cucumbers, thinly sliced
  • 50g / 1/4 medium Red Onion, thinly sliced
  • 15g / 1/4 cup Fresh Dill, chopped
  • 15g / 1/4 cup Fresh Parsley, chopped
  • 30ml / 2 tablespoons Olive Oil
  • 30ml / 2 tablespoons White Vinegar
  • 5g / 1 teaspoon Sugar
  • 2g / 1/2 teaspoon Salt
  • 1g / 1/4 teaspoon Black Pepper, freshly ground

Instructions

  1. Wash and thinly slice the cucumbers and red onion.
  2. Chop the fresh dill and parsley.
  3. In a small bowl, whisk together the olive oil, white vinegar, sugar, salt, and black pepper.
  4. In a mixing bowl, combine the sliced cucumbers, red onion, dill, and parsley.
  5. Pour the dressing over the salad and toss gently.
  6. Chill for at least 10 minutes before serving.
