  • 4 cups vegetable broth
  • 1.5 pounds potatoes, peeled and cubed
  • 1 cup chopped parsnips
  • 1 cup frozen peas
  • 1 cup frozen green beans
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
