- 2 cups (250g) all-purpose flour
- ¾ cup (150g) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- ½ cup (113g) unsalted butter, melted
- ½ cup (120ml) milk
- ¼ cup (60ml) plain yogurt
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples (such as Honeycrisp or Fuji)
- 2 tablespoons (25g) granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the melted butter, milk, yogurt, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- In a small bowl, combine the diced apples, sugar, and cinnamon.
- Gently fold the apple mixture into the muffin batter.
- Fill each muffin cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
