Quick and easy apple fritter bites with warm cinnamon and a sweet glaze. Perfect for breakfast, brunch, or dessert!

- 2 medium apples, peeled, cored, and diced
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons lemon juice
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 4 cups vegetable oil, for frying
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- In a medium bowl, combine diced apples, sugar, cinnamon, nutmeg, and lemon juice. Mix well and set aside.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk egg, milk, melted butter, and vanilla extract.
- Add wet ingredients to dry ingredients and mix until just combined. Do not overmix.
- Gently fold in apple mixture into the batter.
- Heat vegetable oil to 350°F (175°C).
- Drop spoonfuls of batter into hot oil and fry for 2-3 minutes on each side until golden brown.
- Remove fritters with a slotted spoon and place on paper towels to drain.
- Whisk together powdered sugar, milk, and vanilla extract for the glaze. Add more milk for desired consistency.
- Dip warm fritters into the glaze or drizzle over the top.
- Serve warm and enjoy!
