Instructions
- Preheat oven to 375°F (190°C) and line baking sheets.
- Cream together butter, granulated sugar, and brown sugar until fluffy.
- Beat in egg and vanilla.
- Whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet, mixing until just combined.
- Divide dough in half; roll each half into a 9×12 inch rectangle.
- Combine softened butter, sugar, and cinnamon for filling.
- Spread filling over each dough rectangle.
- Roll up each rectangle tightly into a log.
- Slice each log into 1/2-inch thick rounds.
- Place cookies on baking sheets, leaving space.
- Bake for 8-10 minutes until edges are golden.
- Cool on baking sheets before transferring to a wire rack.
- Beat cream cheese and butter until smooth for frosting.
- Add powdered sugar and vanilla, mixing until combined.
- Add milk until desired consistency is reached.
- Frost cooled cookies.
