Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 lb spaghetti
  • 1 tbsp olive oil
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 oz) can diced tomatoes and green chilies (like Rotel), undrained
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a bowl, toss chicken breasts with olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Heat a skillet over medium-high heat. Cook chicken for 6-8 minutes per side, or until cooked through. Let cool slightly, then shred or dice the chicken.
  3. Cook spaghetti according to package directions. Drain and set aside.
  4. While spaghetti is cooking, heat olive oil in a large skillet over medium heat. Add green bell pepper, red bell pepper, and onion. Cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  5. In a large bowl, combine cooked spaghetti, sautéed vegetables, diced tomatoes and green chilies, cream of mushroom soup, cream of chicken soup, chicken broth, shredded chicken, cheddar cheese, and Monterey Jack cheese. Mix well to combine.
  6. Pour the spaghetti mixture into the prepared baking dish. Spread evenly.
  7. Bake in the preheated oven for 20-25 minutes, or until bubbly and golden brown.
  8. Garnish with fresh parsley before serving.

Notes

  • Spice Level: Adjust cayenne pepper to your preference.
  • Cheese: Colby Jack or Pepper Jack can be substituted for cheddar and Monterey Jack.
