Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 1/2 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 1/2 cup peanut butter
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon sriracha (or less, to taste)
- 2 cloves garlic, minced
- 1/4 cup water (or more, to thin)
- Cooked rice, for serving
- Chopped green onions, for garnish
- Sesame seeds, for garnish
Instructions
- In a bowl, combine chicken, soy sauce, cornstarch, sesame oil, ginger, and garlic powder. Marinate for 15 minutes.
- In a separate bowl, whisk peanut butter, honey, soy sauce, rice vinegar, sesame oil, sriracha, and minced garlic. Add water to desired consistency.
- Heat a skillet over medium-high heat. Cook chicken until browned and cooked through, about 6-8 minutes.
- Pour peanut sauce over chicken, stir well. Simmer for a few minutes to thicken the sauce.
- Serve over rice, garnish with green onions and sesame seeds.
