Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha (or less, to taste)
  • 2 cloves garlic, minced
  • 1/4 cup water (or more, to thin)
  • Cooked rice, for serving
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, combine chicken, soy sauce, cornstarch, sesame oil, ginger, and garlic powder. Marinate for 15 minutes.
  2. In a separate bowl, whisk peanut butter, honey, soy sauce, rice vinegar, sesame oil, sriracha, and minced garlic. Add water to desired consistency.
  3. Heat a skillet over medium-high heat. Cook chicken until browned and cooked through, about 6-8 minutes.
  4. Pour peanut sauce over chicken, stir well. Simmer for a few minutes to thicken the sauce.
  5. Serve over rice, garnish with green onions and sesame seeds.
