Easy & comforting Italian Penicillin Soup packed with flavor and nutrients. Perfect for a chilly evening or when you’re feeling under the weather!
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup ditalini pasta
- 1 cup cooked shredded chicken (or turkey)
- 1/2 cup grated Parmesan cheese, plus more for serving
- 2 cups chopped fresh spinach
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, celery & cook until softened, about 5-7 mins.
- Add garlic & cook for another minute until fragrant.
- Pour in chicken broth, diced tomatoes, oregano, basil, & red pepper flakes. Bring to boil, reduce heat, & simmer for 10 minutes.
- Add ditalini pasta & cook according to package directions, about 8-10 minutes, or until pasta is tender.
- Stir in chicken & Parmesan cheese. Cook until heated through, about 2-3 minutes.
- Add spinach & cook until wilted, about 1-2 minutes.
- Season with salt & pepper to taste.
- Serve hot, garnished with parsley & Parmesan. Offer lemon wedges on the side.
