Description

Easy & comforting Italian Penicillin Soup packed with flavor and nutrients. Perfect for a chilly evening or when you’re feeling under the weather!


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup ditalini pasta
  • 1 cup cooked shredded chicken (or turkey)
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 cups chopped fresh spinach
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Lemon wedges, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery & cook until softened, about 5-7 mins.
  2. Add garlic & cook for another minute until fragrant.
  3. Pour in chicken broth, diced tomatoes, oregano, basil, & red pepper flakes. Bring to boil, reduce heat, & simmer for 10 minutes.
  4. Add ditalini pasta & cook according to package directions, about 8-10 minutes, or until pasta is tender.
  5. Stir in chicken & Parmesan cheese. Cook until heated through, about 2-3 minutes.
  6. Add spinach & cook until wilted, about 1-2 minutes.
  7. Season with salt & pepper to taste.
  8. Serve hot, garnished with parsley & Parmesan. Offer lemon wedges on the side.
