For the Crumble:

  • 1/2 cup (1 stick) unsalted butter, softened (113g)
  • 1/2 cup granulated sugar (100g)
  • 1 1/4 cups all-purpose flour (156g)
  • 1/4 teaspoon salt (1.5g)

For the Cookies:

  • 1/2 cup (1 stick) unsalted butter, softened (113g)
  • 1/2 cup granulated sugar (100g)
  • 1 large egg yolk
  • 1 teaspoon vanilla extract (5ml)
  • 1 1/2 cups all-purpose flour (188g)
  • 1/4 teaspoon salt (1.5g)

For the Filling:

  • 1/2 cup fruit jam (strawberry, raspberry, or apricot) (120ml)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

Make the Crumble: In a medium bowl, cream together the softened butter and sugar until light and fluffy. Add the flour and salt. Mix until the mixture resembles coarse crumbs. Set aside.

Make the Cookies: In a separate medium bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract until well combined.

  1. In a small bowl, whisk together flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  2. Roll the dough into 1-inch balls. Place the balls onto the prepared baking sheets, leaving some space between each cookie.
  3. Use your thumb or the back of a small spoon to make an indentation in the center of each cookie.
  4. Fill each indentation with about 1/4 teaspoon of jam.
  5. Sprinkle the crumble mixture evenly over the tops of the cookies.
  6. Bake for 12-15 minutes, or until the edges are lightly golden brown.
  7. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
