Ingredients

- 1 cup orzo pasta
- 2 cups fresh spinach, chopped
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup olive oil
- 3 tbsp lemon juice
- 1 tsp lemon zest
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup feta cheese (optional)
Instructions
- Cook the orzo pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled orzo, chopped spinach, and chickpeas.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, salt, and black pepper.
- Pour the dressing over the orzo mixture and toss gently to combine.
- If using, sprinkle feta cheese on top before serving.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
