Ingredients

  • 1 cup orzo pasta
  • 2 cups fresh spinach, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup feta cheese (optional)

Instructions

  • Cook the orzo pasta according to package instructions. Drain and rinse under cold water to cool.
  • In a large bowl, combine the cooled orzo, chopped spinach, and chickpeas.
  • In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, salt, and black pepper.
  • Pour the dressing over the orzo mixture and toss gently to combine.
  • If using, sprinkle feta cheese on top before serving.
  • Refrigerate for at least 30 minutes before serving to allow flavors to meld.
