Ingredients

- 4 cups (200g) kale, chopped
- 1/2 cup (100g) grated Parmesan cheese
- 1/4 cup (60ml) lemon juice
- 1/4 cup (60ml) olive oil
- 1/2 cup (100g) cherry tomatoes, halved
- 1/4 cup (50g) red onion, thinly sliced
- 1/4 cup (50g) croutons
- Salt and pepper to taste
Instructions
- In a large bowl, massage the chopped kale with lemon juice and olive oil for 2-3 minutes until tender.
- Add grated Parmesan cheese, cherry tomatoes, red onion, and croutons to the bowl.
- Toss all ingredients together until well combined.
- Season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for up to 30 minutes before serving.
