Ingredients

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 tsp salt
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1/2 cup (40g) old-fashioned oats
  • 1 cup (240g) raspberry jam
  • 2 tbsp (30ml) lemon juice
  • 1 tbsp lemon zest
  • 1 cup (125g) fresh raspberries
  • 1 tbsp (8g) cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang.
  2. In a medium bowl, whisk together flour, sugar, and salt.
  3. Add cold cubed butter and cut it into the flour mixture until coarse crumbs form.
  4. Stir in oats until combined.
  5. Reserve 1 cup of the crumble mixture for topping; set aside.
  6. Press the remaining mixture firmly into the bottom of the prepared pan to form the crust.
  7. Bake crust for 15 minutes, or until lightly golden.
  8. In a bowl, combine raspberry jam, lemon juice, lemon zest, raspberries, and cornstarch. Mix well.
  9. Spread the filling evenly over the baked crust.
  10. Sprinkle reserved crumble mixture evenly over the filling.
  11. Bake 25–30 minutes, until the topping is golden and filling is bubbly.
  12. Cool completely in the pan, then refrigerate at least 1 hour before cutting into bars.
