- 1 cup (120g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/4 tsp salt
- 1/2 cup (113g) unsalted butter, cold and cubed
- 1/2 cup (40g) old-fashioned oats
- 1 cup (240g) raspberry jam
- 2 tbsp (30ml) lemon juice
- 1 tbsp lemon zest
- 1 cup (125g) fresh raspberries
- 1 tbsp (8g) cornstarch
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang.
- In a medium bowl, whisk together flour, sugar, and salt.
- Add cold cubed butter and cut it into the flour mixture until coarse crumbs form.
- Stir in oats until combined.
- Reserve 1 cup of the crumble mixture for topping; set aside.
- Press the remaining mixture firmly into the bottom of the prepared pan to form the crust.
- Bake crust for 15 minutes, or until lightly golden.
- In a bowl, combine raspberry jam, lemon juice, lemon zest, raspberries, and cornstarch. Mix well.
- Spread the filling evenly over the baked crust.
- Sprinkle reserved crumble mixture evenly over the filling.
- Bake 25–30 minutes, until the topping is golden and filling is bubbly.
- Cool completely in the pan, then refrigerate at least 1 hour before cutting into bars.
