- 2 ripe mangoes, peeled and diced
- 1 large cucumber, sliced
- 1 cup fresh blueberries
- 1 ripe avocado, diced
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh mint leaves, chopped
- 2 tablespoons fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons honey
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced mangoes, sliced cucumber, blueberries, diced avocado, and thinly sliced red onion.
- In a small bowl, whisk together lime juice, honey, olive oil, salt, and pepper until well combined.
- Pour the dressing over the fruit and vegetable mixture and toss gently to coat all ingredients evenly.
- Add the chopped mint and cilantro leaves and toss again lightly.
- Refrigerate for at least 15 minutes to allow the flavors to meld together.
- Serve chilled as a refreshing side dish or light meal.
