Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss sweet potatoes with olive oil, maple syrup, cinnamon, nutmeg, and salt.
  3. Spread sweet potatoes in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.
