- 2 large sweet potatoes, peeled and cubed
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup chopped pecans
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss sweet potatoes with olive oil, maple syrup, cinnamon, nutmeg, and salt.
- Spread sweet potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.
- Remove from oven and sprinkle with chopped pecans.
- Serve hot.
