- Vegetable Broth: 8 cups / 1.9 liters
- Crushed Tomatoes: 1 (28 ounce) can / 794g
- Tomato Sauce: 1 (15 ounce) can / 425g
- Cooked Crab Meat: 1 pound / 450g, shell removed
- Cut Green Beans: 1 cup / 100g
- Corn Kernels: 1 cup / 150g (fresh or frozen)
- Chopped Fresh Parsley: 1/2 cup / 15g
- Seafood Seasoning: 1 teaspoon / 5g (like Old Bay)
- Black Pepper: 1/2 teaspoon / 2.5g
- Red Pepper Flakes: 1/4 teaspoon / 1.25g (optional)
- Lemon Juice: 1 tablespoon / 15ml
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion, celery, and carrots. Cook until softened, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Pour in vegetable broth, crushed tomatoes, and tomato sauce. Stir well to combine.
- Bring the mixture to a simmer.
- Add crab meat, green beans, and corn kernels to the pot. Stir gently.
- Season with seafood seasoning, black pepper, and red pepper flakes (if using).
- Reduce heat to low, cover, and simmer for at least 30 minutes to allow the flavors to meld. For a richer flavor, simmer for up to 1 hour.
- Stir in chopped fresh parsley and lemon juice just before serving.
- Taste and adjust seasonings as needed.
