For the Sweet Potatoes:
- 2 pounds (900g) sweet potatoes, peeled and cubed
- 1/4 cup (60ml) milk
- 2 tablespoons (30g) butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the Miso Butter:
- 4 tablespoons (60g) butter, softened
- 2 tablespoons (30g) miso paste
- 1 tablespoon (15ml) honey
- 1/2 teaspoon (1g) ginger, grated
Instructions
- Boil the Sweet Potatoes: Place the cubed sweet potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.
- Mash the Sweet Potatoes: Return the drained sweet potatoes to the pot. Add the milk, 2 tablespoons of butter, salt, and pepper. Mash until smooth and creamy.
- Prepare the Miso Butter: In a small bowl, combine the softened butter, miso paste, honey, and grated ginger. Mix well until everything is fully incorporated.
- Combine: Gently fold the miso butter into the mashed sweet potatoes until well combined.
- Serve: Serve hot and enjoy!
