- 4 large eggs
- 4 ounces feta cheese, crumbled (113g)
- 1/2 cup cherry tomatoes, halved (75g)
- 1/4 cup Kalamata olives, pitted and halved (35g)
- 2 tablespoons olive oil (30ml)
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
- Optional: red pepper flakes for heat
Instructions
- Preheat oven to 375°F (190°C).
- Drizzle olive oil in oven-safe skillet. Sauté garlic for 30 seconds.
- Add tomatoes and olives. Season with oregano, salt, pepper. Cook 5 minutes.
- Crumble feta over tomato mixture.
- Create four wells; crack an egg into each.
- Bake for 12-15 minutes, until egg whites set.
- Garnish with parsley and red pepper flakes (if using). Serve immediately.
