Ingredients
4 cups (400g) green cabbage, shredded
1 can (400g) chickpeas, rinsed and drained
1 medium (150g) cucumber, diced
1 cup (150g) cherry tomatoes, halved
1/2 cup (70g) kalamata olives, pitted and halved
1/3 cup (50g) feta cheese, crumbled
3 tbsp (45ml) olive oil
2 tbsp (30ml) lemon juice
1 tsp dried oregano
1/2 tsp sea salt
1/4 tsp black pepper
Instructions
In a large bowl, combine the shredded cabbage, rinsed chickpeas, diced cucumber, halved cherry tomatoes, and halved kalamata olives.
In a small jar or bowl, whisk together the olive oil, fresh lemon juice, dried oregano, sea salt, and black pepper until well combined.
Pour the dressing over the salad ingredients and toss thoroughly until everything is evenly coated.
Gently fold in the crumbled feta cheese.
Allow the salad to sit for 10 minutes before serving to slightly soften the cabbage and allow the flavors to meld.
