Ingredients

  • 1 (15-ounce) can chickpeas, drained and rinsed (425g)
  • 1 cucumber, diced (about 200g)
  • 1 pint cherry tomatoes, halved (about 300g)
  • 1/2 red onion, thinly sliced (about 75g)
  • 4 ounces feta cheese, crumbled (115g)
  • 1/4 cup fresh parsley, chopped (15g)
  • 1/4 cup fresh mint, chopped (15g)
  • 3 tablespoons olive oil (45ml)
  • 2 tablespoons lemon juice (30ml)
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion. Chop the parsley and mint.
  2. In a large bowl, combine the chickpeas, cucumber, tomatoes, red onion, feta, parsley, and mint.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to coat.
  5. Serve immediately or chill for later.
