Ingredients

- 1 (15-ounce) can chickpeas, drained and rinsed (425g)
- 1 cucumber, diced (about 200g)
- 1 pint cherry tomatoes, halved (about 300g)
- 1/2 red onion, thinly sliced (about 75g)
- 4 ounces feta cheese, crumbled (115g)
- 1/4 cup fresh parsley, chopped (15g)
- 1/4 cup fresh mint, chopped (15g)
- 3 tablespoons olive oil (45ml)
- 2 tablespoons lemon juice (30ml)
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion. Chop the parsley and mint.
- In a large bowl, combine the chickpeas, cucumber, tomatoes, red onion, feta, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat.
- Serve immediately or chill for later.

- Tip: Add the dressing just before serving to prevent the salad from becoming soggy.
