Savory and sweet Miso-Sesame Glazed Brussels Sprouts, roasted to perfection for a healthy and flavorful side dish.


Ingredients

  • 1 1/2 pounds Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup white miso paste
  • 2 tablespoons maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon water
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon sesame seeds
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated.
  3. Spread the Brussels sprouts in a single layer on the prepared baking sheet, cut-side down.
  4. Roast for 20-25 minutes, or until the Brussels sprouts are tender and slightly browned.
  5. While the Brussels sprouts are roasting, prepare the miso-sesame glaze. In a small bowl, whisk together the miso paste, maple syrup, sesame oil, rice vinegar, water, ginger, garlic, and red pepper flakes (if using).
  6. Remove the Brussels sprouts from the oven and transfer them back to the large bowl.
  7. Pour the miso-sesame glaze over the roasted Brussels sprouts and toss to coat evenly.
  8. Spread the glazed Brussels sprouts back onto the baking sheet.
  9. Return to the oven and roast for an additional 5-10 minutes, or until the glaze is slightly caramelized and sticky.
  10. Remove from the oven and transfer to a serving dish.
  11. Garnish with sesame seeds and chopped green onions.
  12. Serve immediately and enjoy!
