Combine all ingredients (rolled oats, peanut butter, honey, chocolate chips, ground flax seed, and vanilla extract) in a large bowl.
Stir vigorously with a sturdy spatula or spoon until all components are thoroughly incorporated and the mixture is thick and cohesive.
Cover the bowl tightly with plastic wrap or transfer the mixture to an airtight container and chill in the refrigerator for at least 30 minutes to firm up.
