- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- 1 cup chopped pecans
- 1 cup dried cranberries
Instructions
- In a large saucepan, melt the butter over medium heat.
- Stir in the granulated sugar, brown sugar, and milk. Bring to a boil, stirring constantly.
- Boil for 1 minute, continuing to stir.
- Remove from heat and stir in the vanilla extract.
- Add the oats, pecans, and cranberries. Stir until well combined.
- Drop by rounded tablespoons onto wax paper or parchment paper.
- Let cool completely until firm.
