- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract
- 3 medium bananas, sliced
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Crust: In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour the melted butter over the crumbs and mix well until evenly moistened.
- Press the Crust: Press the mixture into the bottom of mini muffin tins (about 24 tins) to form the crust. Use a small measuring cup or your fingers to firmly press the crumbs down. Refrigerate for at least 30 minutes to set.
- Make the Filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sweetened condensed milk and mix until well combined. Stir in the lemon juice and vanilla extract until smooth.
- Assemble the Pies: Remove the muffin tins from the refrigerator. Place a slice of banana on top of the crust in each tin. Spoon or pipe the cream cheese filling over the banana slices, filling each tin to the top. Smooth the surface. Refrigerate for at least 2 hours, or until the filling is firm.
- Prepare the Topping: In a chilled bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract and continue to beat until stiff peaks form.
- Top and Serve: Just before serving, pipe or spoon the whipped cream over the mini pies. Garnish with additional banana slices, if desired. Carefully remove the mini pies from the muffin tins and serve immediately. Keep refrigerated.
