Description
Tender chicken in a rich, velvety garlic mushroom sauce. This one-pan wonder is quick, easy, and too good not to share for a comforting weeknight dinner.
Ingredients
4 chicken breasts (approx. 700g-900g / 1.5–2 lbs)
8 oz (225g) mushrooms, sliced
2 tbsp (30ml) olive oil
2 cloves garlic, minced
1 cup (240ml) heavy cream
1/2 cup (120ml) chicken broth
1/2 cup (50g) parmesan cheese, grated
1 tsp dried thyme
Salt and freshly ground black pepper, to taste
Instructions
Pat chicken breasts dry and season generously with salt, black pepper, and dried thyme.
Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown; remove and set aside.
Add sliced mushrooms to the same pan and sauté for 5-7 minutes until soft and golden brown.
Stir in minced garlic and cook for 1 minute until fragrant. Pour in chicken broth and heavy cream, bringing to a gentle simmer for 5 minutes to thicken.
Return chicken to the pan, nestling it into the sauce. Cook for another 5-8 minutes until chicken is cooked through and sauce has thickened. Add a splash of broth if needed.
Remove from heat and stir in grated parmesan cheese until melted and smooth. Taste and adjust seasoning as necessary.
Notes
For a deeper earthy flavor, use brown cremini mushrooms.
Serve this creamy chicken over pasta, rice, or mashed potatoes to enjoy all the rich sauce.
Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days; reheat gently on the stovetop.
