Ingredients
1 lb (450g) chicken breast tenders
1 lb (450g) asparagus, woody ends trimmed
3 tbsp (45g) butter, melted
1 tbsp (15ml) olive oil
1 lemon (half juiced, half sliced)
1 tsp (5g) Italian seasoning
1 tsp (5g) garlic powder
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Season chicken tenders with salt, pepper, and garlic powder.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken for 3-4 minutes per side until golden and cooked through; remove and set aside.
Add asparagus to the same skillet and sauté for 4-5 minutes until tender-crisp.
Return chicken to the pan.
Whisk melted butter, lemon juice, and Italian seasoning; pour over chicken and asparagus.
Garnish with lemon slices and parsley.
Notes
Don’t overcook the asparagus or it will get mushy.
Add minced fresh garlic to the butter mixture for extra punch.
