A healthy, colorful, and practically mess-free sheet pan dinner featuring savory turkey sausage and vibrant roasted vegetables, perfect for sharing at your next family dinner.
Ingredients
12 oz (340g) turkey sausage, sliced into rounds
2 bell peppers (red and yellow), about 2 cups / 300g chopped
1 zucchini, about 1.5 cups / 150g sliced into half-moons
1 red onion, about 1 cup / 120g chopped
1 cup (80g) broccoli florets
3 tbsp (45ml) olive oil
1 tsp dried Italian seasoning
1/2 tsp garlic powder
Salt and pepper to taste
Grated parmesan cheese (optional)
Instructions
Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper for easier cleanup, if desired.
Place turkey sausage, peppers, zucchini, onion, and broccoli on the large sheet pan.
Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt, and pepper.
Toss everything with your hands or a spatula to coat evenly. Spread in a single layer, ensuring not to overcrowd the pan for best roasting.
Bake for 20-25 minutes, stirring halfway through, until veggies are tender-crisp and sausage is browned.
Remove from oven. Top with grated parmesan cheese if desired, allowing the residual heat to melt it slightly.
Notes
Line your sheet pan with parchment paper for even easier cleanup.
Feel free to swap in whatever vegetables you have in the fridge, such as sweet potatoes, Brussels sprouts, or asparagus.
For truly roasted (not steamed) vegetables, avoid overcrowding the pan; use two pans if necessary.
