A comforting and cheesy all-in-one meal featuring wild rice and broccoli!


Ingredients

  • 1/2 cup wild rice, uncooked
  • 2 cups vegetable broth
  • 1 large head of broccoli, cut into florets
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 1/2 cups milk
  • 4 cups shredded cheddar cheese, divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup bread crumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet or Dutch oven, combine wild rice and vegetable broth. Bring to a boil, then reduce heat and simmer, covered, for 45-50 minutes, or until rice is tender and most of the liquid is absorbed.
  3. While the rice is cooking, steam or microwave the broccoli florets until they are bright green and slightly tender, about 5-7 minutes. Set aside.
  4. Once the rice is cooked, stir in the olive oil, chopped onion, and minced garlic. Cook over medium heat until the onion is softened, about 5 minutes.
  5. Add the flour to the rice mixture and cook for 1 minute, stirring constantly.
  6. Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until the sauce has thickened, about 3-5 minutes.
  7. Remove from heat and stir in 3 cups of the shredded cheddar cheese, salt, and pepper until the cheese is melted and the sauce is smooth.
  8. Gently fold in the steamed broccoli florets.
  9. Pour the mixture into the prepared baking dish.
  10. In a small bowl, combine the bread crumbs and melted butter. Sprinkle evenly over the casserole.
  11. Sprinkle the remaining 1 cup of cheddar cheese over the bread crumbs.
  12. Bake for 20-25 minutes, or until golden brown and bubbly.
  13. Let stand for 10 minutes before serving.
