A comforting and cheesy all-in-one meal featuring wild rice and broccoli!

- 1/2 cup wild rice, uncooked
- 2 cups vegetable broth
- 1 large head of broccoli, cut into florets
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 1/2 cups milk
- 4 cups shredded cheddar cheese, divided
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup bread crumbs
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a large skillet or Dutch oven, combine wild rice and vegetable broth. Bring to a boil, then reduce heat and simmer, covered, for 45-50 minutes, or until rice is tender and most of the liquid is absorbed.
- While the rice is cooking, steam or microwave the broccoli florets until they are bright green and slightly tender, about 5-7 minutes. Set aside.
- Once the rice is cooked, stir in the olive oil, chopped onion, and minced garlic. Cook over medium heat until the onion is softened, about 5 minutes.
- Add the flour to the rice mixture and cook for 1 minute, stirring constantly.
- Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until the sauce has thickened, about 3-5 minutes.
- Remove from heat and stir in 3 cups of the shredded cheddar cheese, salt, and pepper until the cheese is melted and the sauce is smooth.
- Gently fold in the steamed broccoli florets.
- Pour the mixture into the prepared baking dish.
- In a small bowl, combine the bread crumbs and melted butter. Sprinkle evenly over the casserole.
- Sprinkle the remaining 1 cup of cheddar cheese over the bread crumbs.
- Bake for 20-25 minutes, or until golden brown and bubbly.
- Let stand for 10 minutes before serving.

- Broccoli Tip: Avoid overcooking the broccoli to keep it crisp-tender.
- Cheese Suggestion: Use freshly shredded cheddar cheese for best melting.
