A comforting and easy one-pot meal featuring gnocchi, chicken, and vegetables in a creamy sauce.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon black pepper
- 1 (16 ounce) package gnocchi
- 1 (10 ounce) package frozen peas and carrots
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
- Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pot. Stir in the thyme, rosemary, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
- Add the gnocchi and frozen peas and carrots to the pot. Cook until the gnocchi are tender, about 5 minutes.
- Stir in the heavy cream and cooked chicken. Heat through.
- Garnish with fresh parsley and serve.
Notes
- Substitution: You can substitute chicken thighs for a richer flavor.
- Dairy-Free: Use cashew cream or another plant-based cream alternative.
