- 500g / 2 large ripe peaches, sliced
- 225g / 8oz burrata cheese, one ball
- 1/4 cup fresh basil leaves, chopped
- 140g / 5oz arugula (rocket) or mixed greens
- Vinaigrette:
- 60ml / 1/4 cup extra virgin olive oil
- 30ml / 2 tablespoons balsamic vinegar
- 15ml / 1 tablespoon honey
- 5ml / 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Wash and slice the peaches.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Arrange arugula or mixed greens on a platter. Add sliced peaches and burrata cheese.
- Drizzle with vinaigrette and garnish with fresh basil leaves.
- Serve immediately.

- Peaches: Use ripe but firm peaches.
- Burrata: Tear the burrata to release the creamy center.
- Vinaigrette: Adjust sweetness and tanginess to taste.
