Description

A refreshing summer salad with sweet peaches, creamy burrata, and a tangy balsamic vinaigrette.


Ingredients

  • 500g / 2 large ripe peaches, sliced
  • 225g / 8oz burrata cheese, one ball
  • 1/4 cup fresh basil leaves, chopped
  • 140g / 5oz arugula (rocket) or mixed greens
  • Vinaigrette:
    • 60ml / 1/4 cup extra virgin olive oil
    • 30ml / 2 tablespoons balsamic vinegar
    • 15ml / 1 tablespoon honey
    • 5ml / 1 teaspoon Dijon mustard
    • Salt and pepper to taste

Instructions

  1. Wash and slice the peaches.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  3. Arrange arugula or mixed greens on a platter. Add sliced peaches and burrata cheese.
  4. Drizzle with vinaigrette and garnish with fresh basil leaves.
  5. Serve immediately.

  • Burrata: Tear the burrata to release the creamy center.
