For the Peach Topping:
- 3 tablespoons butter, melted
- 1/4 cup packed brown sugar
- 2 ripe peaches, peeled and sliced
For the Cake:
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 12-cup muffin tin.
- Prepare the Peach Topping: In a small bowl, combine the melted butter and brown sugar. Spoon about 1 teaspoon of the mixture into the bottom of each muffin cup.
- Arrange peach slices in a decorative pattern on top of the brown sugar mixture in each cup.
- Prepare the Cake: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Spoon the batter evenly over the peach slices in each muffin cup, filling about 2/3 full.
- Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the mini cakes cool in the muffin tin for 5-10 minutes before inverting them onto a wire rack to cool completely.
