For the Peach Topping:

  • 3 tablespoons butter, melted
  • 1/4 cup packed brown sugar
  • 2 ripe peaches, peeled and sliced

For the Cake:

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 12-cup muffin tin.
  2. Prepare the Peach Topping: In a small bowl, combine the melted butter and brown sugar. Spoon about 1 teaspoon of the mixture into the bottom of each muffin cup.
  3. Arrange peach slices in a decorative pattern on top of the brown sugar mixture in each cup.
  4. Prepare the Cake: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  8. Spoon the batter evenly over the peach slices in each muffin cup, filling about 2/3 full.
  9. Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the mini cakes cool in the muffin tin for 5-10 minutes before inverting them onto a wire rack to cool completely.
