Ingredients

  • 1/2 teaspoon (2.5g) baking soda
  • 1/4 teaspoon (1.25g) salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 cup (125g) creamy peanut butter
  • 24 mini peanut butter cups, unwrapped

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg and vanilla extract until well combined.
  5. Mix in peanut butter until smooth.
  6. Gradually add flour mixture to wet ingredients, mixing until just combined.
  7. Scoop dough into 1-inch balls and place on prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 8-10 minutes, or until edges are lightly golden.
  9. Immediately press a mini peanut butter cup into the center of each cookie while still warm.
  10. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Measuring Flour: Spoon flour into the measuring cup and level it off to avoid adding too much.
  • Softened Butter: Ensure butter is truly softened, not melted, for the best dough consistency.
  • Don’t Overbake: Cookies will continue to set as they cool. Remove them when the edges are just barely golden.
