- 1 cup (200g) all-purpose flour
- 1/2 cup (100g) unsalted butter, softened
- 1/2 cup (100g) creamy peanut butter
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) brown sugar
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 1/2 teaspoon (2.5g) baking soda
- 1/4 teaspoon (1.25g) salt
- For the filling: 1/2 cup (100g) creamy peanut butter mixed with 1/4 cup (50g) powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Roll dough into 1-inch balls and place on prepared baking sheets. Flatten slightly with a fork in a crisscross pattern.
- Bake for 10-12 minutes or until edges are lightly golden. Cool on wire racks.
- For filling, mix peanut butter and powdered sugar until smooth. Spread on bottom of one cookie and sandwich with another.
