  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, cut into cubes
  • 1 cup shredded provolone cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and bell peppers; cook until softened, about 5-7 minutes.
  2. Add thinly sliced beef; cook until browned, breaking it up with a spoon.
  3. Pour in beef broth and add diced tomatoes, Worcestershire sauce, garlic powder, and black pepper. Bring to a simmer.
  4. Reduce heat to low, cover, and simmer for 15-20 minutes.
  5. Stir in cream cheese until melted and smooth.
  6. Remove from heat and stir in provolone cheese until melted.
  7. Garnish with fresh parsley before serving.
