- 1 tablespoon olive oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 pound beef sirloin, thinly sliced
- 4 cups beef broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 8 ounces cream cheese, cut into cubes
- 1 cup shredded provolone cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and bell peppers; cook until softened, about 5-7 minutes.
- Add thinly sliced beef; cook until browned, breaking it up with a spoon.
- Pour in beef broth and add diced tomatoes, Worcestershire sauce, garlic powder, and black pepper. Bring to a simmer.
- Reduce heat to low, cover, and simmer for 15-20 minutes.
- Stir in cream cheese until melted and smooth.
- Remove from heat and stir in provolone cheese until melted.
- Garnish with fresh parsley before serving.
Notes
- Substitution: You can use flank steak or ribeye instead of sirloin.
- Variation: Add mushrooms or jalapeños for extra flavor.
