Ingredients
1 cup (200g) Jasmine or Basmati rice (not instant)
1 ¾ cups (420ml) water
1 tablespoon (14g) unsalted butter
1 8-ounce (227g) can crushed pineapple in juice (do not drain)
½ teaspoon (3g) kosher salt
2 tablespoons (25g) granulated sugar (or cane/turbinado sugar)
1 tablespoon (15ml) fresh-squeezed lime juice
2 tablespoons (10g) fresh chopped green onions, for garnish
Instructions
In a medium saucepan, combine the jasmine rice, water, butter, crushed pineapple (with juice), salt, and sugar. Stir until well combined.
Heat the mixture on medium-high until it reaches a boil. Reduce the heat to a low simmer, cover the saucepan tightly, and cook for 15-20 minutes, or until the rice is cooked through and all liquid is absorbed.
Remove the saucepan from the heat. Squeeze fresh lime juice over the top. Using a fork, gently fluff the rice to incorporate the lime juice and separate the grains.
Serve the pineapple rice hot, garnished generously with fresh chopped green onions.
Notes
Avoid lifting the lid during cooking to ensure proper steam retention and fluffy rice.
Fresh-squeezed lime juice is essential for the best flavor; bottled juice will not yield the same vibrant taste.
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat on the stovetop with a splash of water for best results.
