  • 1 cup vegetable oil
  • 2 large eggs
  • 1 (15 ounce) can pumpkin puree
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 13×9 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, combine the sugar, oil, eggs, and pumpkin puree. Mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bars cool completely in the pan before frosting.
  8. In a large bowl, beat the cream cheese and butter together until smooth and creamy.
  9. Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
  10. Stir in the vanilla extract.
  11. Once the bars are completely cool, spread the cream cheese frosting evenly over the top.
  12. Cut into squares and serve.
