  • 1 loaf (1 pound) challah bread, cut into 1-inch cubes
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped pecans
  • 1/4 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, cold and cubed
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Spread bread cubes in the prepared baking dish.
  3. In a large bowl, whisk together milk, heavy cream, pumpkin puree, granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and cloves.
  4. Pour the mixture evenly over the bread cubes, pressing down gently to ensure the bread is soaked. Sprinkle with 1/2 cup chopped pecans.
  5. In a separate bowl, prepare the topping: Combine flour, brown sugar, and cinnamon. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in 1/2 cup chopped pecans.
  6. Sprinkle the topping evenly over the bread pudding.
  7. Bake for 45-50 minutes, or until golden brown and set. A knife inserted into the center should come out clean.
  8. Let cool slightly before serving. Serve warm.

  • Bread type: Challah bread works best but Brioche or French bread can be substituted.
  • Nuts: Toast the pecans before chopping for enhanced flavor.
