Description

A comforting and flavorful Pumpkin Pecan Bread Pudding with a luscious caramel sauce.


Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 cup (245g) pumpkin puree
  • 1 cup (237ml) milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 8 cups cubed bread (such as challah or brioche), stale
  • 1 cup chopped pecans
  • For the Caramel Sauce:
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (57g) unsalted butter
  • 1/4 cup (59ml) heavy cream
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the melted butter, sugar, eggs, pumpkin puree, milk, vanilla extract, cinnamon, nutmeg, ginger, and salt.
  3. Add the cubed bread and pecans to the bowl and toss to coat evenly. Let the bread soak in the mixture for about 15-20 minutes, pressing down occasionally to ensure all the bread is moistened.
  4. Pour the bread pudding mixture into the prepared baking dish.
  5. Bake for 45-50 minutes, or until the top is golden brown and the center is set. A knife inserted into the center should come out clean.
  6. While the bread pudding is baking, prepare the caramel sauce. In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns into a golden amber color.
  7. Add the butter and stir until melted and smooth. Be careful, as the mixture may bubble up.
  8. Slowly pour in the heavy cream and add the salt. Stir until the sauce is smooth and creamy. Remove from heat.
  9. Let the bread pudding cool slightly before serving. Drizzle with warm caramel sauce.
