A comforting and flavorful Pumpkin Pecan Bread Pudding with a luscious caramel sauce.

- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 cup (245g) pumpkin puree
- 1 cup (237ml) milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 8 cups cubed bread (such as challah or brioche), stale
- 1 cup chopped pecans
- For the Caramel Sauce:
- 1/2 cup (100g) granulated sugar
- 1/4 cup (57g) unsalted butter
- 1/4 cup (59ml) heavy cream
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large bowl, whisk together the melted butter, sugar, eggs, pumpkin puree, milk, vanilla extract, cinnamon, nutmeg, ginger, and salt.
- Add the cubed bread and pecans to the bowl and toss to coat evenly. Let the bread soak in the mixture for about 15-20 minutes, pressing down occasionally to ensure all the bread is moistened.
- Pour the bread pudding mixture into the prepared baking dish.
- Bake for 45-50 minutes, or until the top is golden brown and the center is set. A knife inserted into the center should come out clean.
- While the bread pudding is baking, prepare the caramel sauce. In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns into a golden amber color.
- Add the butter and stir until melted and smooth. Be careful, as the mixture may bubble up.
- Slowly pour in the heavy cream and add the salt. Stir until the sauce is smooth and creamy. Remove from heat.
- Let the bread pudding cool slightly before serving. Drizzle with warm caramel sauce.
