For the Crust:
- 1 1/4 cups (156g) all-purpose flour
- 1/2 teaspoon (3g) salt
- 1/2 cup (113g) unsalted butter, chilled and cubed
- 1/4 cup (60ml) ice water
For the Caramelized Onions:
- 2 large yellow onions, thinly sliced
- 2 tablespoons (30ml) olive oil
- 1 tablespoon (12g) brown sugar
- 1/4 teaspoon (1.5g) salt
- 1/4 teaspoon (0.5g) black pepper
For the Filling:
- 1 (15 ounce/425g) can pumpkin puree
- 1 cup (226g) ricotta cheese
- 2 large eggs
- 1/4 cup (25g) grated Parmesan cheese
- 1/4 teaspoon (0.5g) ground nutmeg
- 1/4 teaspoon (1.5g) salt
- 1/4 teaspoon (0.5g) black pepper
Instructions
- Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender until coarse crumbs form. Gradually add ice water until the dough comes together. Form a disk, wrap in plastic, and refrigerate for 30 minutes.
- Caramelize the Onions: Heat olive oil in a skillet over medium heat. Add onions, brown sugar, salt, and pepper. Cook, stirring occasionally, until softened and caramelized (20-25 minutes). Set aside to cool.
- Prepare the Filling: In a bowl, combine pumpkin puree, ricotta, eggs, Parmesan, nutmeg, salt, and pepper. Mix until smooth.
- Assemble the Tart: Preheat oven to 375°F (190°C). Roll out the dough to a 12-inch circle. Transfer to a 9-inch tart pan. Trim and crimp edges.
- Spread caramelized onions evenly over the crust. Pour pumpkin filling over the onions.
- Bake: Bake for 45-50 minutes, or until the filling is set and crust is golden brown. Cool completely before slicing and serving.
