Description

For the Crust:

  • 1 1/4 cups (156g) all-purpose flour
  • 1/2 teaspoon (3g) salt
  • 1/2 cup (113g) unsalted butter, chilled and cubed
  • 1/4 cup (60ml) ice water

For the Caramelized Onions:

  • 2 large yellow onions, thinly sliced
  • 2 tablespoons (30ml) olive oil
  • 1 tablespoon (12g) brown sugar
  • 1/4 teaspoon (1.5g) salt
  • 1/4 teaspoon (0.5g) black pepper

For the Filling:

  • 1 (15 ounce/425g) can pumpkin puree
  • 1 cup (226g) ricotta cheese
  • 2 large eggs
  • 1/4 cup (25g) grated Parmesan cheese
  • 1/4 teaspoon (0.5g) ground nutmeg
  • 1/4 teaspoon (1.5g) salt
  • 1/4 teaspoon (0.5g) black pepper

Instructions

  1. Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender until coarse crumbs form. Gradually add ice water until the dough comes together. Form a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. Caramelize the Onions: Heat olive oil in a skillet over medium heat. Add onions, brown sugar, salt, and pepper. Cook, stirring occasionally, until softened and caramelized (20-25 minutes). Set aside to cool.
  3. Prepare the Filling: In a bowl, combine pumpkin puree, ricotta, eggs, Parmesan, nutmeg, salt, and pepper. Mix until smooth.
  4. Assemble the Tart: Preheat oven to 375°F (190°C). Roll out the dough to a 12-inch circle. Transfer to a 9-inch tart pan. Trim and crimp edges.
  5. Spread caramelized onions evenly over the crust. Pour pumpkin filling over the onions.
  6. Bake: Bake for 45-50 minutes, or until the filling is set and crust is golden brown. Cool completely before slicing and serving.
