- 1 pound (450g) ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon (15ml) olive oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1/2 cup (120ml) beef broth
- 1/4 cup (60ml) pumpkin puree
- 1 teaspoon smoked paprika
- 12 slider buns
- Cheddar cheese slices, cut into pumpkin shapes
- Lettuce leaves
- Tomato slices
- Fresh chives or green onion tops
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, salt, and pepper. Mix gently until just combined.
- Shape the ground beef mixture into 12 small, round patties. Flatten each patty slightly.
- Heat olive oil in a large skillet over medium heat. Add the patties and cook for about 3-4 minutes per side, or until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Pour in the beef broth and pumpkin puree. Stir in the smoked paprika. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Cut the slider buns in half. Place the bottom halves of the buns on a baking sheet.
- Place a cooked patty on each bun bottom. Spoon the pumpkin sauce over each patty.
- Top with cheddar cheese slices cut into pumpkin shapes.
- Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and add lettuce and tomato slices.
- Top with the top halves of the slider buns.
- To make the stems, insert a small piece of fresh chive or green onion top into the top of each slider bun.
- Serve immediately.
Notes
- Tip: Lightly toast slider buns to prevent sogginess.
- Variation: Add a pinch of cayenne pepper for a spicy kick.
