Description

These Queso Chipotle Chicken Sliders are a flavor explosion in every bite! Creamy queso meets smoky chipotle in a quick and easy recipe perfect for any occasion.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, finely chopped
  • 1 can (10 oz / 280g) diced tomatoes and green chilies
  • 2 chipotle peppers in adobo sauce, minced (plus 1 tbsp sauce)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp smoked paprika
  • 8 oz (225g) cream cheese, softened
  • 1 cup (120g) shredded cheddar cheese
  • 1/2 cup (60g) shredded Monterey Jack cheese
  • 1/4 cup (60ml) chicken broth
  • 1 package (12 count) slider buns
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken breasts until browned and cooked through (6–8 minutes per side). Remove and shred.
  3. In the same skillet, sauté onion and garlic until softened (3–5 minutes). Add bell pepper and cook until slightly tender (3–5 minutes).
  4. Stir in diced tomatoes and green chilies, minced chipotle peppers, chipotle sauce, chili powder, cumin, and smoked paprika. Cook for 5 minutes, stirring occasionally.
  5. Reduce heat to low. Add cream cheese, cheddar, and Monterey Jack cheese. Stir until melted and smooth. Thin with chicken broth if needed.
  6. Stir in shredded chicken.
  7. Slice slider buns. Place bottom halves on a baking sheet. Spoon chicken mixture over buns. Top with top halves.
  8. Bake for 10–15 minutes, or until buns are golden brown and cheese is bubbly.
  9. Garnish with cilantro and serve immediately.

  • Spicier: Add more chipotle peppers or cayenne pepper.
  • Creamier: Use pepper jack cheese.
  • Vegetarian: Substitute chicken with black beans or sautéed vegetables.
