Quick & Easy Homemade Butter Chicken

Description

Deliciously creamy butter chicken made easy in under an hour!


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tbsp ginger-garlic paste
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder (adjust to taste)
  • 1/4 cup plain yogurt
  • 1 tbsp lemon juice
  • Salt to taste
  • 2 tbsp vegetable oil
  • 1 medium onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder (adjust to taste)
  • 1 (14.5 oz) can crushed tomatoes
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 1 tbsp dried fenugreek leaves (kasoori methi), crushed
  • Salt to taste
  • Sugar to taste (optional)
  • Fresh cilantro leaves, for garnish

Instructions

  1. In a bowl, combine chicken with ginger-garlic paste, garam masala, turmeric powder, red chili powder, yogurt, lemon juice, and salt. Marinate for 30 minutes.
  2. Heat 1 tbsp oil in a pan. Cook chicken until browned and cooked through. Set aside.
  3. In the same pan, add remaining oil and butter. Sauté onion until golden. Add ginger-garlic paste; sauté for 1 minute.
  4. Add garam masala, turmeric powder, and red chili powder. Sauté for 30 seconds. Add tomatoes and salt. Simmer for 10-15 minutes, until thickened.
  5. (Optional) Blend the sauce with an immersion blender until smooth.
  6. Add chicken to the sauce. Stir well to combine.
  7. Stir in heavy cream and crushed fenugreek leaves. Add sugar to taste. Simmer for 5-10 minutes.
  8. Garnish with cilantro. Serve hot with rice, naan, or roti.
