- 1 cup quinoa
- 2 cups water
- 1/2 teaspoon salt
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon honey
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese (optional)
Instructions
- Rinse the quinoa thoroughly in a fine-mesh strainer under cold running water for about 2 minutes.
- In a medium saucepan, combine the rinsed quinoa, water, and 1/2 teaspoon salt. Bring to a boil over high heat.
- Reduce heat to low, cover, and simmer for 15 minutes until the quinoa is tender and the water is absorbed.
- Remove from heat and let stand covered for 5 minutes. Fluff with a fork and transfer to a large bowl to cool completely.
- Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and chop the fresh parsley and mint.
- In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to make the dressing.
- Once the quinoa has cooled, add the cucumber, cherry tomatoes, red onion, parsley, and mint to the bowl.
- Pour the dressing over the salad and toss gently to combine. Sprinkle feta cheese over the top if using.
- Refrigerate for at least 30 minutes before serving. Taste and adjust seasoning before serving.
