A refreshing and flavorful Easy Asian Cucumber Salad perfect as a quick side dish.
Ingredients

- 2 cucumbers, thinly sliced
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons sesame seeds
- 2 green onions, thinly sliced
Instructions
- In a medium bowl, combine the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, minced garlic, and red pepper flakes (if using). Whisk until the sugar is dissolved.
- Add the thinly sliced cucumbers to the bowl with the dressing. Toss gently to coat the cucumbers evenly.
- Sprinkle the sesame seeds and sliced green onions over the cucumber salad.
- Toss again lightly to distribute the sesame seeds and green onions.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. For the best flavor, chill for 1-2 hours.
- Before serving, give the salad a final toss.
- Serve chilled and enjoy!
