A refreshing and flavorful Easy Asian Cucumber Salad perfect as a quick side dish.


Ingredients

  • 2 cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons sesame seeds
  • 2 green onions, thinly sliced

Instructions

  1. In a medium bowl, combine the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, minced garlic, and red pepper flakes (if using). Whisk until the sugar is dissolved.
  2. Add the thinly sliced cucumbers to the bowl with the dressing. Toss gently to coat the cucumbers evenly.
  3. Sprinkle the sesame seeds and sliced green onions over the cucumber salad.
  4. Toss again lightly to distribute the sesame seeds and green onions.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. For the best flavor, chill for 1-2 hours.
  6. Before serving, give the salad a final toss.
  7. Serve chilled and enjoy!
