- 1 head of garlic
- 1 tablespoon olive oil
- 2 pounds Yukon Gold potatoes, peeled and quartered
- 1/2 cup milk
- 4 tablespoons unsalted butter
- 4 ounces mascarpone cheese
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh chives, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Cut off the top of the garlic head, exposing the cloves. Place the garlic head on a piece of aluminum foil, drizzle with olive oil, and wrap tightly. Roast for 45-60 minutes, or until the cloves are soft and golden.
- While the garlic is roasting, place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are tender.
- Drain the potatoes well and return them to the pot. Mash the potatoes with a potato masher or ricer until smooth.
- Heat the milk and butter in a small saucepan until the butter is melted. Gradually add the warm milk mixture to the mashed potatoes, stirring until smooth and creamy.
- Once the roasted garlic is cool enough to handle, squeeze the cloves out of their skins and into the mashed potatoes. Add the mascarpone cheese and stir until well combined.
- Season the mashed potatoes with salt and freshly ground black pepper to taste. Garnish with fresh chives, if desired. Serve hot.
