Roasted Garlic Mascarpone Mashed Potatoes

Description

Elevate classic mashed potatoes with rich roasted garlic and creamy mascarpone. Simple, decadent, and ready in an hour!


Ingredients

  • 1 head of garlic
  • 1 tablespoon olive oil
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • 4 ounces mascarpone cheese
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh chives, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Cut off the top of the garlic head, exposing the cloves. Place the garlic head on a piece of aluminum foil, drizzle with olive oil, and wrap tightly. Roast for 45-60 minutes, or until the cloves are soft and golden.
  2. While the garlic is roasting, place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are tender.
  3. Drain the potatoes well and return them to the pot. Mash the potatoes with a potato masher or ricer until smooth.
  4. Heat the milk and butter in a small saucepan until the butter is melted. Gradually add the warm milk mixture to the mashed potatoes, stirring until smooth and creamy.
  5. Once the roasted garlic is cool enough to handle, squeeze the cloves out of their skins and into the mashed potatoes. Add the mascarpone cheese and stir until well combined.
  6. Season the mashed potatoes with salt and freshly ground black pepper to taste. Garnish with fresh chives, if desired. Serve hot.
