Ingredients

  • 1/2 cup roasted red peppers, sliced
  • 1 cup cooked chickpeas
  • 2 whole wheat tortillas
  • 1/4 cup hummus
  • 1/2 cup baby spinach
  • 1/4 cup feta cheese (optional)
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste

For the Dressing:

  • 2 tbsp yogurt
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder

Instructions

  1. Preheat a pan over medium heat and add olive oil.
  2. Add chickpeas, cumin, paprika, salt, and pepper. Cook for 5 minutes until slightly crispy.
  3. In a small bowl, mix yogurt, lemon juice, and garlic powder to make the dressing.
  4. Warm the tortillas in a dry pan for 30 seconds on each side.
  5. Spread hummus evenly over each tortilla.
  6. Layer roasted red peppers, chickpeas, baby spinach, and feta cheese (if using) on top.
  7. Drizzle with the yogurt dressing.
  8. Fold the sides of the tortilla inward and roll tightly to form a wrap.
  9. Cut in half and serve immediately.
