Ingredients

  • 6 medium ripe tomatoes, diced
  • 1/2 cup finely chopped white onion
  • 1/4 cup chopped fresh cilantro
  • 2 jalapeño peppers, seeded and minced
  • 2 cloves garlic, minced
  • 3 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon black pepper

Instructions

  1. Wash all fresh produce thoroughly under running water and pat dry with clean towels.
  2. Core the tomatoes and dice them into small, uniform pieces. Place in a medium mixing bowl.
  3. Finely chop the white onion and add to the bowl.
  4. Remove stems from jalapeño peppers, halve them, and remove seeds and membranes. Mince finely and add to the bowl.
  5. Mince the garlic cloves and add to the mixture.
  6. Chop the fresh cilantro leaves and stems finely and add to the bowl.
  7. Squeeze fresh lime juice over the mixture.
  8. Add salt, ground cumin, and black pepper.
  9. Gently stir until well combined, being careful not to crush the tomatoes.
  10. Taste and adjust seasoning as needed.
  11. Cover with plastic wrap or transfer to an airtight container and refrigerate for at least 30 minutes to allow flavors to meld.
  12. Before serving, give a final stir and transfer to a serving bowl.
