Description

A savory bake that is the ultimate comfort meal, this Sauerkraut Casserole features lean ground beef, tangy sauerkraut, fluffy white rice, and a creamy mushroom soup base, all topped with melted Swiss cheese. It’s surprisingly easy and ready in just 40 minutes!


Ingredients

1 lb (450g) lean ground beef
1 small onion (100g), chopped
2 cups (470g) sauerkraut, drained
1 cup (185g) cooked white rice
1 (10.5 oz / 298g) can condensed cream of mushroom soup
1 cup (113g) shredded Swiss cheese


Instructions

Preheat oven to 350°F (175°C) and grease a baking dish.
Brown the ground beef and onion in a skillet over medium heat; drain any excess grease.
Stir in the drained sauerkraut, cooked white rice, and condensed cream of mushroom soup until well combined.
Transfer the mixture evenly to the greased baking dish.
Top generously with shredded Swiss cheese.
Bake for 30 minutes, or until the cheese is melted, golden, and bubbly.

Notes

Rinse the sauerkraut if you prefer a milder tang.
Serve with a dollop of sour cream on top for extra richness and a creamy contrast.
Leftovers store well in an airtight container in the refrigerator for up to 3-4 days.
