- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup granulated sugar
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C).
- Make the Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
- Bake the crust for 8-10 minutes, then let cool.
- Make the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth. Blend in sour cream and vanilla. Add eggs one at a time, mixing on low speed until just combined.
- Pour filling over cooled crust.
- Bake for 50-60 minutes, or until the center is almost set. Turn off the oven and let the cheesecake sit in the oven with the door slightly ajar for 1 hour. This prevents cracking.
- Remove from oven and let cool completely. Refrigerate for at least 4 hours, or preferably overnight.
- Make the Churro Topping: In a small bowl, combine sugar and cinnamon.
- Brush the top of the cheesecake with melted butter, then sprinkle with cinnamon-sugar mixture.
- Cut into slices and serve.
